Granny Smith Apple Spiced Cake With Caramel Cream

When we think of Granny we think of the old adage, ‘over the river and through the woods’ but this reference to Granny is more about Granny Smith apples than it is about Granny herself! We start these cakes with Granny Smith apples and add a hint of cinnamon and nutmeg. Granny herself would surely be proud! The cakes are reminiscent of apple pies with all those wonderful flavors swirling around in your mouth. What would make Granny wild, you ask? Caramel, of course!

Granny’s gone wild is filled to overflowing with homemade caramel cream filling. If you could join us in our Cape Whoopie kitchen, to watch this process, you’d wonder why we put this much time into one filling. Well, we do it to make Granny proud!  We make this cream the way Granny would have, if she was as wild as this whoopie pie flavor! This cream is as luscious and satiny as caramel can get. This is the gooey in between parts of apple pie slathered on an apple cake. No wonder Granny went crazy wild!!

Here are the ingredients:

Apple Cake Ingredients: sugar, cage free eggs, butter (cream and salt), flour (unbleached hard wheat flour, malted barley flour, niacin, reduced iron, thiamin mononitrate, riboflavin, folic acid), cream cheese (cream cheese culture, whey protein concentrate, salt, guar gum, carob bean gum), granny smith apples, baking powder (sodium acid pyrophosphate, sodium bicarbonate, corn starch and monocalcium phosphate), vanilla, cinnamon, nutmeg, salt.  Caramel Filling Ingredients: sugar, butter (cream and salt), water, cream, cage free egg whites, modified corn starch, tapioca flour.
