Vanilla Cakes With Strawberry Cream
When summer comes to the northeast we start thinking about strawberries and what is the best thing to accompany those ripe, red berries. Our favorite treat is a strawberry shortcake with lots of fresh berries piled up on a shortcake style cake. These lovely vanilla cakes, with loads of vanilla beans swirling through them are the perfect backdrop for the tart crispness of our strawberry cream filling.
The filling is loaded with butter and marshmallow and as many strawberries as can be. The sweet yet tart flavor of our strawberry cream is the most elegant filling for our vanilla cake. It harkens back to a summer afternoon on the porch at Grandma’s house, looking out over the ocean. I think I feel the ocean breezes in my hair…its all in there, summers in Maine!

Vanilla Cake Ingredients: sugar, cage free eggs, butter (cream and salt), flour (unbleached hard wheat flour, malted barley flour, niacin, reduced iron, thiamin mononitrate, riboflavin, folic acid), cream cheese culture, whey protein concentrate, salt, guar gum, carob bean gum), baking powder (sodium acid pyrophosphate, sodium bicarbonate, corn starch and monocalcium phosphate), vanilla, salt. Strawberry Filling Ingredients: sugar, water, butter (cream, salt), strawberry extract, cage free egg whites, modified corn starch, tapioca flour.
